Black Bean Salsa recipe.



Hey guys!

Since I'm still sort of in party mode from turning 25 this past weekend, I thought I'd share the recipe that was such a hit at my party. When I announced that we were going to be making yummy fish tacos at my party, I invited each of my friends to bring a side dish to share. My sweet friend Emmi brought along a fresh black bean and corn salsa, and it was so good that it barely lasted until party time. It was just the perfect snack to munch on while we fried up a hundred little fish pieces.


I asked her to share the recipe with you guys, so here it is! Way easy.


Black Bean Salsa

2 cans black beans, drained & rinsed
1 can sweet corn, rinsed
1 tomato, chopped
1 avocado (mango or peach), pitted and chopped -- we used a ripe peach and left out avocado to save $
1 jalapeno, seeded & chopped
½ white onion, chopped
2 cloves garlic, chopped
½ cup chopped cilantro
1 lime, juiced
1 tbsp extra-light olive oil
salt & pepper, to taste

That's it! Just dice up, mix together and eat right away. Refrigerate whatever leftovers you have, and munch until it's gone. Emmi recommends eating this salsa with lime chips. Mmm, it's so good.

  1. I make a similar recipe that we eat as a salad. I use frozen corn that has been thawed but still really cold. Add some balsamic vinegar and cumin and it gives it a great punch! Super yummy and really healthy!
